Grandma's Banana Nut Bread

Some childhood memories are eating this banana bread that my Grandma would make. It is by far the best I have had, so I would like to share it with you.

Grandma's Banana Nut Bread

Ingredients

2 eggs

1/3 cup buttermilk (or lightly fill the bottom of measuring cup with vinegar, rest milk and let sit couple minutes)

1/2 cup oil (I use melted coconut oil)

1 cup sugar

1 3/4 cup flour

1 teaspoon baking soda

1/2 teaspoon salt (I use Himalayan Pink salt)

1/2 cup walnuts

1 cup mashed ripe bananas

Instructions

1. Preheat oven to 325 degrees F. Grease loaf pan and set aside.

2. Mix together flour, baking soda, and salt. Set aside.

3. In a standing mixer (or by hand) mix eggs, sugar, buttermilk, oil, and mashed bananas. Add dry ingredients slowly until just enough mixed. Stir in walnuts.

4. Pour in prepared pan and bake 45 minutes or until done.

You might even want to make double because this bread will be gone quick!

This is my Grandma and I when I was younger. Her hair is the perfect 50's curls. She taught me always have a scarf on those windy days or for a ride in the convertible!
