Springtime Cake

With spring on the way, a perfect way to celebrate! Inspired by a cake in an ad from March 1953 for vegetable shortening. This cake has a vintage taste and perfect for spring!

Ingredients

Cake

  • 1/2 cup softened butter
  • 2 cups sifted flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/3 cup sugar
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 eggs 

Frosting

  • 3/4 cup softened butter
  • 6 cups powdered sugar
  • 1 teaspoon vanilla
  • dash of salt
  • 5 tablespoons milk
  • green food coloring (I get mine here)
  • marshmallows
  • yellow gumdrops

Instructions

  1. Preheat oven to 375 degrees F. Grease and flour two round cake pans.
  2. In a large bowl sift together all dry ingredients. Mix butter into dry ingredients.
  3. In a separate bowl mix milk and vanilla. Add half of the liquid mixture into first mixture until fully mixed. Add the rest of the liquid mixture and eggs. Beat until fully combined.
  4. Evenly pour batter into prepared pans.
  5. Bake for 25 minutes. 
  6. Allow cake to fully cool. While cake is cooling prepare frosting by whipping all ingredients together.
  7. Frost cake with green frosting. Cut marshmallows for flower petals, and gumdrops for centers.
